New Executive Chef at Affina Food & Wine

Dexter Salazar and the Affina family welcome Matthew Zimny as the new Executive Chef at the trendy Affina Food and Wine restaurant, in Carmel. Chef Zimny is originally from Detroit, Michigan, and has been creating savory cuisine for 20 years. He has worked in Chicago, Minneapolis, and Alaska.

While in Alaska, he served as the Executive Sous-chef at the Seward Windsong Lodge, the Executive Chef at Talkeentna Alaskan Lodge, and Chef de Cuisine at Kenai Fjords Wilderness Lodge, located on a very exclusive off the grid island, owned by CIRI Alaska Native Company

Seared Scallops, Beet Risotto, Fennel, Cress, Pickled Daikon

He came to Carmel due to his wife’s employment in Carmel. They both felt this was a great move, as well as the start of a new adventure. Since arriving in Carmel, Chef Zimny has worked at local favorites, La Bicyclette and Casanova. His plan for the menu, is to create artistic, edgy, locally sourced dishes that fit the Affina big city feel. Chef also plans to capitalize on his experience in Alaska by introducing new seafood dishes. In addition, having worked at Charlie Trotters, Chef Zimny plans to create a similar dining experience. We asked Matt what he thought so far, his response was “It just feels right”.
